Ingredients

  • 150 ml cup of natural yogurt
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • 175g golden powdered sugar
  • 140g self-raising flour
  • 1 teaspoon Baking powder
  • 100g ground almonds
  • 175g unsalted butter, melted
  • raspberry jam
  • Raspberries
  • Clotted cream

If you prefer not to cook with nuts, replace the ground almonds with 100g more flour. The end result will still taste good, but won’t store or freeze as well.Make a cake out of it
If you want to cut a cake, prepare a batch of dough and bake it in a 20cm diameter deep round cake tin lined with baking paper at 190°C/fan 170°C/gas mark 5 for 40-45 minutes. Serve on a pretty cake plate, garnished with icing and roses. Roses can be made up to a month in advance and colored to match the wedding theme. Preparation steps

  1. Line a 12-hole muffin tin with paper liners
  2. Preheat the oven to 190°C/fan 170°C/gas 5
  3. In a pitcher, combine yogurt, eggs and vanilla extract
  4. In a large bowl, mix the dry ingredients and a pinch of salt
  5. Make a well in the middle of the dry ingredients
  6. Pour in the yogurt mixture and melted butter
  7. Using a spatula or metal spoon, quickly fold the ingredients together – being careful not to overwork the mixture
  8. Pour the dough into the paper cases and fill them fairly full
  9. Bake in the preheated oven for 18-20 minutes, until golden brown, risen and springy
  10. Allow the cakes to cool for a few minutes
  11. Carefully lift the cakes onto a wire rack to cool completely
  12. Store cooled cakes in an airtight container for up to 3 days or freeze as soon as possible (cupcakes only).
  13. Cut off the tops of the cupcakes and set them aside
  14. Place a dollop of raspberry jam on each cupcake
  15. Top with a few raspberries and a generous heaping teaspoon of clotted cream from a 550g pot
  16. Place the lids back on the cupcakes
  17. Before serving, dust the cupcakes with powdered sugar
