  1. Preheat the oven to 220°C/fan 200°C/gas 7.

  4. Stir in the sugar.
  5. In a separate container, warm the milk in the microwave for about 30 seconds.
  6. Add vanilla and lemon juice to the warmed milk and set aside.
  7. Place a baking sheet in the preheated oven.
  8. Make a well in the dry mixture and pour in the liquid. Mix the ingredients quickly with a cutlery knife. The mixture will be wet at first.
  9. Sprinkle some flour on a work surface and place the dough on it.
  10. Sprinkle some more flour on the dough and your hands. Fold the dough 2-3 times until it becomes smoother.
  11. Shape the dough into a circle about 4 cm deep.
  12. Using a 5cm cookie cutter, dip it in flour and dip it into the dough. Repeat this process until you have four scones.
  13. If necessary, shape the remaining dough into a round again and cut out another four scones.
  14. Brush the top of the scones with beaten egg.
  15. Carefully place the scones on the hot baking sheet.
  16. Bake for 10 minutes or until the scones have risen and become golden on top.
  17. Enjoy the scones warm or enjoy them cold the day they are baked. Serve generously garnished with jam and clotted cream.
  18. If you want to freeze the scones, let them cool first. When ready to eat, defrost and refresh in a low oven (approx. 160°C/fan 140°C/gas 3) for a few minutes.
