Ingredients

  • 550g piece of pumpkin, peeled and cut into pieces
  • 500g pack of shortcrust pastry
  • 175g light muscovado sugar
  • 2 eggs
  • 142 ml pot of double cream
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp ground ginger
  • small grating of nutmeg
  • 142 ml can of double cream
  • 5 tbsp maple syrup
  • 25 g pecans, finely chopped

Preparation steps

  1. Place the pumpkin pieces in a large microwave-safe bowl.
  2. Cover the bowl and cook the pumpkin on high (850W) for 15 minutes or until the pumpkin is tender.
  3. Place the cooked pumpkin in a colander to drain and allow to cool.
  4. Roll out the dough on a lightly floured surface to the thickness of a £1 coin.
  5. Make sure the rolled out dough is wide enough to line a 25cm tart tin.
  6. Carefully slide the dough into the tart pan, making sure to leave an overhang.
  7. Chill the dough in the tin for 30 minutes.
  8. Preheat the oven to 200°C/fan 180°C/gas 6.
  9. Line the dough base with foil and baking beans.
  10. Bake the dough with the foil and the beans for 15-20 minutes.
  11. Remove the foil and beans and bake for another 10 minutes until golden brown.
  12. Lower the oven temperature to 160°C/fan 140°C/gas 3.
  13. In a food processor, combine the cooked pumpkin, sugar, eggs, cream and spices.
  14. Mix the ingredients until the mixture is smooth.
  15. Pour the blended mixture into the baked dough pan.
  16. Bake the cake for 1 hour until the filling has risen in the center. It sinks as it cools.
  17. Remove the cake from the tart pan and let it cool.
  18. In a separate bowl, beat the cream with the maple syrup until thickened.
  19. Fold pecans into the whipped cream.
  20. Serve spoonfuls of maple cream with pumpkin pie pieces.
