Preparation steps

  1. Bring the kettle to the boil, then measure 300ml of boiling water into a jug and add the melted butter and vanilla extract.
  2. Sift flour and baking powder into a large mixing bowl with a generous pinch of salt.
  3. Make a well in the center, then pour in the contents of the jug and beat in the flour very quickly with a wooden spoon until there are no lumps.
  4. Cut out 6 10cm x 10cm squares from baking paper and grease them well with oil.
  5. Place the churro dough in a piping bag fitted with a large star tip and pipe spiral dough circles onto the parchment.
  6. The easiest way to do this is to start in the middle and move the nozzle back and forth until you reach the edge of the paper, avoiding gaps.
  7. Refrigerate until dough feels firm, 45 minutes or up to 2 hours.
  8. Fill a large, deep pot one-third full with oil.
  9. Heat until a cube of bread turns brown in 45 seconds – 1 minute (approx. 180 °C).
  10. Cover a tray with paper towels and mix together the powdered sugar and cinnamon.
  11. Remove the churros from the refrigerator and add 2 or 3 directly to the pan, discarding the parchment.
  12. Fry until golden brown and crispy, then remove with a slotted spoon and drain on a tray lined with kitchen paper.
  13. Continue cooking the remaining dough in batches and gradually sprinkle the cooked churros with a little cinnamon sugar.
  14. Once you have cooked all the churros, mix them with the remaining cinnamon sugar and place them on the plate with scoops of your favorite ice cream.
