Ingredients
- 85g very soft butter, plus some butter for the dish
- 350g raspberry jam
- large, fresh, uncut white bread loaf (approx. 800 g)
- 4 eggs
- 400 ml cream
- 400 ml milk
- 85g powdered sugar, plus a little more
- 1 teaspoon vanilla pulp or pulp scraped from a vanilla pod
Preparation steps
- Butter a deep 2-quart baking dish.
- Add half of the jam and spread it over the bottom of the mold.
- Cut the crust and rounded top off the loaf.
- Cut the bread into 4 thick slices.
- Mix the crust and leftover bread into crumbs and freeze for later.
- Butter one side of each slice of bread.
- Turn the slices over and brush the unbuttered sides with the remaining jam.
- Roll up the slices from the short sides, with the jam side inwards, to create 4 thick sponge rolls.
- Halve each roll to make 8 short, squat Swiss rolls.
- Arrange the Swiss rolls cut side up in the baking dish.
- Mix eggs, cream, milk, sugar and vanilla.
- Sift the mixture into a jug.
- Gently pour the custard mixture over the breadcrumbs and let it absorb gradually.
- Let the dish stand at room temperature for 30 minutes to allow the cream to absorb further.
- Preheat the oven to 160°C/140°C fan/gas 3.
- Sprinkle some more powdered sugar over the pudding.
- Bake the pudding for 1 hour to 1 hour and 15 minutes, until the top is golden brown and the custard has set slightly.
- Let the pudding cool for 5 minutes.
