Ingredients

  • 1 20 cm wide Christmas cake (see “Suitable”)
  • 200g icing sugar mixed with enough water to create a smooth, runny icing, plus a little extra for rolling
  • 4 tbsp apricot jam
  • 500g pack of marzipan
  • 750g royal powdered sugar
  • green food coloring
  • 750g ready to roll, white fondant icing
  • 8cm round cookie cutter (optional)
  • 20 cm round cake board or cake stand
  • Holly cookie cutters in various sizes
  • red ribbon

Preparation steps

  1. Make sure the cake has cooled completely, remove it from the tin and peel off the baking paper.
  2. Using an 8cm round cutter, cut a hole in the center of the cake and press down as far as possible.
  3. Cut all the way down with a small, sharp knife.
  4. Carefully remove the center by lifting the cake and pushing the smaller cake up through the center (you may need to have someone help you with this).
  5. Save the smaller cake for decorating and giving as gifts (see “Matches”).
  6. Spread some liquid icing around the edges of a cake board or place the large cake on it and turn it over.
  7. On a clean surface dusted with powdered sugar, roll out 100 g of marzipan into a long rectangular strip measuring approximately 8 x 20 cm.
  8. Trim the edges and then use this piece to fill the center hole of the cake.
  9. Trim off any excess material.
  10. Roll out the remaining marzipan into a circle large enough to cover the cake. Use a piece of kitchen twine to check.
  11. Melt the apricot jam in a small saucepan with 1 tablespoon of water, then sieve through a sieve and spread a little on the cake.
  12. Cover the cake with marzipan and cut off any excess marzipan at the bottom and in the middle.
  13. In a large bowl, mix the royal powdered sugar with enough water to create a thick, spreadable icing.
  14. Use food coloring to give it a rich leafy green color.
  15. Quickly spread the icing all over the cake. Don’t worry about being too careful or most of the frosting will be covered.
  16. Break the fondant icing into two clumps and color them different shades of green.
  17. Roll out the icing and use the cutters to cut out lots of holly shapes.
  18. Use some liquid icing as glue to attach the holly leaves to the top of the cake.
  19. Attach a large red bow at the top to complete the look.
