- 50g Rice Pops (we used Rice Krispies)
- 30g raisins, chopped
- 50g butter
- 100g milk chocolate, broken into pieces
- 2 tbsp crunchy peanut butter
- 30g mini marshmallows
- 80g white chocolate
- ready-made holly leaf icing (we used Christmas cake toppers from Sainsbury’s)
- Place rice pops and raisins in a bowl.
- Place butter, milk chocolate, peanut butter and marshmallows in a small saucepan.
- Place the pot over medium-low heat and stir until the chocolate and butter are melted.
- Continue stirring until the marshmallows just begin to melt.
- Pour the melted mixture onto the rice pops and stir until well coated.
- Line an egg cup with cling film.
- Pour about a tablespoon of the mixture into the egg cup and press firmly.
- Remove the pudding from the egg cup, peel off the cling film and place it flat side down in a tart tin.
- Repeat the process with the remaining mixture.
- Chill the pudding until it is firm.
- Melt the white chocolate either in the microwave or in a bowl over a pan of barely simmering water.
- Pour some melted white chocolate over each pudding.
- Finally, top each pudding with holly leaf frosting.
