Christmas Pudding Rice Krispie Cake

  • 50g Rice Pops (we used Rice Krispies)
  • 30g raisins, chopped
  • 50g butter
  • 100g milk chocolate, broken into pieces
  • 2 tbsp crunchy peanut butter
  • 30g mini marshmallows
  • 80g white chocolate
  • ready-made holly leaf icing (we used Christmas cake toppers from Sainsbury’s)

Preparation steps

  1. Place rice pops and raisins in a bowl.
  2. Place butter, milk chocolate, peanut butter and marshmallows in a small saucepan.
  3. Place the pot over medium-low heat and stir until the chocolate and butter are melted.
  4. Continue stirring until the marshmallows just begin to melt.
  5. Pour the melted mixture onto the rice pops and stir until well coated.
  6. Line an egg cup with cling film.
  7. Pour about a tablespoon of the mixture into the egg cup and press firmly.
  8. Remove the pudding from the egg cup, peel off the cling film and place it flat side down in a tart tin.
  9. Repeat the process with the remaining mixture.
  10. Chill the pudding until it is firm.
  11. Melt the white chocolate either in the microwave or in a bowl over a pan of barely simmering water.
  12. Pour some melted white chocolate over each pudding.
  13. Finally, top each pudding with holly leaf frosting.
