- 500g strong white flour, plus some flour for dusting
- 7 g bag of fast-acting dry yeast
- 300 ml milk
- 40g unsalted butter, softened at room temperature
- 1 egg
- Vegetable oil for greasing
- 25g unsalted butter, melted
- 75g soft brown sugar
- 2 tsp ground cinnamon
- 100g dried cranberries
- 100 g chopped dried apricots
- 50g powdered sugar
- Zest 1 lemon
- 200g powdered sugar
- Place flour and 1 teaspoon salt in a large bowl.
- Make a well in the middle and add the yeast.
- Heat milk and butter in a pan until the butter melts and the mixture is lukewarm.
- Add the milk mixture and egg to the flour mixture and stir until the contents form a soft dough (add additional flour if necessary).
- Place the dough on a well-floured surface.
- Knead for 5 minutes, adding more flour if necessary, until the dough is smooth, elastic and no longer sticky.
- Lightly oil a bowl with vegetable oil.
- Place the dough in the bowl and turn until it is coated with oil.
- Cover the bowl with plastic wrap and place in a warm place for 1 hour or until doubled in volume.
- Lightly grease a baking tray and set aside.
- To make the filling, knock the dough back to its original size and turn it out onto a lightly floured surface.
- Roll it out into a 1cm thick rectangle.
- Brush everything with the melted butter.
- Sprinkle sugar, cinnamon and fruit on top.
- Roll the dough into a tight cylinder.
- Cut into 9 x 4 cm slices.
- Place the slices on the prepared baking sheet, leaving some space between them.
- Cover with a tea towel and let rise for 30 minutes.
- Preheat the oven to 190°C/170°C fan/gas 5.
- Bake the rolls for 20-25 minutes or until risen and golden brown.
- Melt the icing sugar with 4 tablespoons of water until syrupy.
- Remove from oven and glaze.
- Set aside on a wire rack to cool.
- After cooling, mix the zest and powdered sugar with about 2 tablespoons of water and drizzle over the rolls.
