Once the rolls are baked to perfection, we add a delicious, glossy glaze that adds a delightful shine and added sweetness to every bite. And to enhance these rolls even further, we generously drizzle them with an irresistibly tangy citrus glaze that will leave your taste buds wanting more.

  • 500g strong white flour, plus some flour for dusting
  • 7 g bag of fast-acting dry yeast
  • 300 ml milk
  • 40g unsalted butter, softened at room temperature
  • 1 egg
  • Vegetable oil for greasing
  • 25g unsalted butter, melted
  • 75g soft brown sugar
  • 2 tsp ground cinnamon
  • 100g dried cranberries
  • 100 g chopped dried apricots
  • 50g powdered sugar
  • Zest 1 lemon
  • 200g powdered sugar

Preparation steps

  1. Place flour and 1 teaspoon salt in a large bowl.
  2. Make a well in the middle and add the yeast.
  3. Heat milk and butter in a pan until the butter melts and the mixture is lukewarm.
  4. Add the milk mixture and egg to the flour mixture and stir until the contents form a soft dough (add additional flour if necessary).
  5. Place the dough on a well-floured surface.
  6. Knead for 5 minutes, adding more flour if necessary, until the dough is smooth, elastic and no longer sticky.
  7. Lightly oil a bowl with vegetable oil.
  8. Place the dough in the bowl and turn until it is coated with oil.
  9. Cover the bowl with plastic wrap and place in a warm place for 1 hour or until doubled in volume.
  10. Lightly grease a baking tray and set aside.
  11. To make the filling, knock the dough back to its original size and turn it out onto a lightly floured surface.
  12. Roll it out into a 1cm thick rectangle.
  13. Brush everything with the melted butter.
  14. Sprinkle sugar, cinnamon and fruit on top.
  15. Roll the dough into a tight cylinder.
  16. Cut into 9 x 4 cm slices.
  17. Place the slices on the prepared baking sheet, leaving some space between them.
  18. Cover with a tea towel and let rise for 30 minutes.
  19. Preheat the oven to 190°C/170°C fan/gas 5.
  20. Bake the rolls for 20-25 minutes or until risen and golden brown.
  21. Melt the icing sugar with 4 tablespoons of water until syrupy.
  22. Remove from oven and glaze.
  23. Set aside on a wire rack to cool.
  24. After cooling, mix the zest and powdered sugar with about 2 tablespoons of water and drizzle over the rolls.
  25. Surcharge.
