Chocolate zucchini cake

  • 350g self-raising flour
  • 50g cocoa powder
  • 1 tsp spice mix
  • 175 ml extra virgin olive oil
  • 375g golden powdered sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 500 ml grated zucchini (measure the volume in a measuring cup, but it will be about 2 medium-sized zucchini; if you use a zucchini that is too large, peel it first and remove the seeds)
  • 140g roasted hazelnuts, roughly chopped
  • 200g dark chocolate, chopped
  • 100 ml cream


Baking with zucchini
Zucchini can retain quite a bit of water, which can affect the finished consistency of your cake. If your grated zucchini seems watery, place them in a clean cloth and wring out some of the liquid in a bowl. Then add the zucchini to the cake mixture as usual. The timing of making zucchini cakes may depend on the water content of your zucchini. Therefore, if necessary, put the cake in the oven for another 10 minutes. Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.

  3. In another bowl, mix olive oil, sugar, eggs, vanilla essence and grated zucchini.
  4. Mix the dry and wet mixture until just combined.
  5. Fold in the roasted hazelnuts.
  6. Line a 24cm cake tin with baking paper.
  7. Pour in your mixture.
  8. Bake for about 40-50 minutes or until a knife inserted into the center comes out clean.
  9. Allow to cool in the tin for 10 minutes.
  10. Turn out onto a cake rack and let cool.
  11. For the glaze, place the chocolate in a bowl.
  12. Bring the cream to the boil in a saucepan.
  13. Pour the hot cream over the chocolate and stir until completely smooth and melted.
  14. Allow the icing to cool slightly and thicken.
  15. Spread the icing over the cake so that it covers it and the icing begins to drip down the sides.
  16. Serve with a cup of tea or enjoy as a pud with a spoonful of something creamy.
