  • 50g butter, plus some butter for the tins
  • 4 large eggs
  • 140g powdered sugar
  • 1 tsp vanilla extract
  • 100g plain flour
  • 25g cocoa
  • ½ tsp baking powder
  • 1 tbsp demerara sugar
  • 75ml hot espresso or strong, rich coffee
  • 4 large egg yolks
  • 75g powdered sugar
  • 125ml Marsala
  • 200g white chocolate, half chopped, half grated
  • 500g can of mascarpone
  • 200g dark chocolate, grated
  • 1 tbsp cocoa

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4. Line 2 x 20cm sandwich tins with butter.
  2. Melt the butter and let it cool slightly.
  3. In a bowl, whisk eggs, sugar, and vanilla together for about 8 minutes, or until the mixture is pale, thick, and has tripled in volume.
  4. Sift the flour, cocoa, baking powder and a pinch of salt over the egg mixture and fold in carefully.
  5. Pour the cooled butter around the side of the bowl and fold until fully incorporated.
  6. Divide the batter between the prepared pans and bake for 10-12 minutes or until a skewer inserted into the center of the cake comes out clean.
  7. Allow the cakes to cool in the pans for a few minutes, then transfer to a wire rack to cool completely.
  8. In the meantime, dissolve the sugar for the filling in the coffee and set aside.
  9. In a heatproof bowl set over a large pot of simmering water, whisk together the egg yolks, sugar, and marsala for 5 minutes or until the mixture is thick and has tripled in volume.
  10. Remove the bowl from the heat and continue whisking until the mixture has cooled.
  11. Melt the chopped white chocolate in the microwave on low heat and allow to cool slightly.
  12. In a separate bowl, stir the mascarpone until smooth and then fold it into the egg mixture along with the cooled white chocolate.
  13. Halve the cakes horizontally.
  14. Place a layer in the bottom of a 20cm springform pan.
  15. Brush the layer with the coffee syrup and spread 3 tablespoons of the mascarpone mixture on top.
  16. Sprinkle 1 tablespoon grated dark chocolate over the mascarpone mixture and repeat the layers until you have finished the fourth cake layer.
  17. Cover the cake with cling film and chill together with the remaining mascarpone mixture for at least 2 hours.
  18. Remove the pan and place the cake on a serving plate.
  19. Cover the cake with the remaining mascarpone mixture.
  20. Mix the remaining dark chocolate with the grated white chocolate and carefully press it onto the edge of the cake.
  21. Dust the top of the cake with cocoa.
