Ingredients

  • 175g butter, softened, plus a little butter for greasing
  • 200g soft light brown sugar
  • 100g golden powdered sugar
  • 1 tbsp vanilla extract
  • 2 large eggs, beaten
  • 250 g flour
  • 1 tsp baking soda
  • 2 tbsp whole milk
  • 150g dark chocolate, chopped into pieces
  • 100 g coarse peanut butter
  • 50g small salted pretzels
  • ½ tsp sea salt flakes

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas. 4. Grease a square baking tin (20 cm) and line it with baking paper.
  2. Place butter, sugar and vanilla extract in a bowl and beat with an electric hand mixer until smooth and creamy.
  3. Add the eggs one at a time, beating well between each addition.
  4. Stir in flour, bicarb and 1/4 teaspoon salt until the mixture forms a dough.
  5. Add the milk and 100g chocolate chips.
  6. Pour half of the mixture into the mold.
  7. Add the peanut butter in dollops to cover the surface.
  8. Top with the remaining dough.
  9. Press everything down with your fingers, but don’t worry about it looking too neat.
  10. Spread the pretzels on top.
  11. Bake for 50 minutes until the dough is firm and crispy on the surface.
  12. Allow to cool to room temperature in the pan before cutting.
  13. Melt the remaining chocolate in a bowl over a small saucepan of gently simmering water or in short bursts in the microwave.
  14. Remove the bars from the mold and drizzle with the chocolate.
  15. Sprinkle with sea salt.
  16. Let it set, then cut into bars.
  17. Store in an airtight container for up to 3 days.
