Ingredients

  • 200g butter
  • 200 g of dark chocolate, less than 70% cocoa is fine
  • 200g light, soft brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 250g self-raising flour
  • Smarties, sweets and sprinkles to decorate
  • 200g dark chocolate
  • 100 ml cream, not refrigerator cold
  • 50g powdered sugar

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas mark 3 and line a 12-hole muffin tin with liners.
  2. Carefully melt the butter, chocolate, sugar and 100 ml hot water in a large saucepan, stirring occasionally, then allow to cool slightly and weigh out the other ingredients.
  3. Stir eggs and vanilla into the chocolate mixture.
  4. Place the flour in a large mixing bowl and then stir in the chocolate mixture until smooth.
  5. Pour the mixture into the ramekins until they are a little more than three-quarters full, leaving some of the mixture.
  6. Set the muffin tin aside for 5 minutes before placing it on a low shelf in the oven.
  7. Bake the cupcakes for 20-22 minutes.
  8. Allow the cupcakes to cool.
  9. For the glaze, melt the chocolate in a heatproof bowl over a pan of barely simmering water.
  10. Once melted, turn off the heat, stir in the cream and add the powdered sugar.
  11. When the frosting is spreadable, spoon some onto each cupcake and decorate with your favorite sprinkles and candies.
