  • 250g dark chocolate, broken into pieces – regular supermarket chocolate will do
  • 300g self-raising flour
  • 300 g light, soft brown sugar, plus 2 tbsp
  • 50g cocoa
  • 200 ml sunflower oil, plus a little oil for greasing
  • 284 ml sour cream
  • 3 eggs
  • 1 tsp vanilla essence
  • 500g white powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp liquid glucose
  • 2 egg whites
  • 25g powdered sugar, sifted

Preparation steps

  1. Preheat the oven to 160°C/fan 140°C/gas mark 4 and grease and line a deep 20cm round cake tin.
  2. Pulse the chocolate in a food processor until crumbs form.
  3. Place flour, sugar, cocoa, oil, 150ml sour cream, eggs, vanilla and 150ml water in the largest mixing bowl you have.
  4. Mix with an electric whisk until smooth, then quickly stir in 150g of the whipped chocolate chips.
  5. Pour into a tin and bake on the middle rack for 1 hour 20 – 1 hour 30 minutes, or until a skewer inserted into the middle comes out clean.
  6. Let cool in the tin.
  7. While the cake is baking, prepare the icing.
  8. Combine remaining chocolate chips and sour cream with 2 tablespoons softened brown sugar in a small saucepan and heat, stirring, until chocolate has melted and a smooth glaze forms.
  9. Let cool down.
  10. When the cake has cooled, cut it into three even layers.
  11. Spread 2 layers with chocolate icing.
  12. To make the angel icing, add sugar, vanilla and liquid glucose to a saucepan with 125ml water.
  13. Bring to a boil and cook until the sugar has melted and the syrup turns clear.
  14. Take off the heat.
  15. Meanwhile, beat the egg whites until stiff, then continue beating, gradually adding the hot sugar syrup in a steady stream, until the mixture is fluffy and thick enough to spread – this may take a few minutes as the mixture cools.
  16. Stir in the powdered sugar.
  17. Working quickly, spread a small amount over each chocolate-covered layer.
  18. Assemble the cake and spread the remaining frosting over the entire cake.
