Ingredients
- 200g dark chocolate, broken into squares (we like Green & Black’s)
- 100g butter, chopped
- 50 g light muscovado sugar
- 85g golden powdered sugar
- 1 tsp vanilla extract
- 1 egg, beaten
- 100g whole pecans
- 100g plain flour
- 1 tsp baking soda
Preparation steps
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Melt 85g chocolate in the microwave on high or over a pan of simmering water for 1 minute.
- Mix butter, sugar, vanilla and egg until smooth.
- Stir in three quarters of the nuts and the remaining chocolate.
- Add flour and baking soda and mix well.
- Place 12 tablespoons of the mixture on two baking sheets, spacing them slightly apart.
- Add the reserved nuts and chocolate.
- Bake for 12 minutes until set.
- Let cool on the trays.
- Stores in a can for up to 3 days.
