Ingredients

  • 200g butter, softened, plus a little butter for greasing
  • 140g fresh cherries, halved and pitted
  • 140g plain flour
  • 200g golden powdered sugar
  • 3 medium eggs
  • 1½ tsp baking powder
  • 75g ground almonds
  • 2 Table spoons of milk
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 200g dark or milk chocolate, chopped
  • 2 tbsp toasted flaked almonds

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Grease a 900 g loaf tin and line it with baking paper.
  3. Dredge the cherries in 1 tablespoon of flour and set aside.
  4. Place butter and sugar in a large bowl and mix until light and fluffy.
  5. Add the eggs one at a time and mix well, one at a time.
  6. Fold in the remaining flour, baking powder and ground almonds.
  7. Stir in milk, vanilla and almond extract and 100 g chocolate with a spatula.
  8. Scrape half of the cake mixture into the pan.
  9. Sprinkle half of the cherries on top.
  10. Add remaining cake mix and remaining cherries.
  11. Bake for 1 hour and 10 minutes or until a skewer comes out clean.
  12. Allow to cool in the tin for 10 minutes.
  13. Remove and place on a rack to cool completely.
  14. Melt the remaining chocolate in the microwave in 20-second bursts.
  15. Drizzle or pipe the melted chocolate over the cake.
  16. Sprinkle with the almonds.
  17. Wait until the chocolate has set slightly before cutting it into slices.
  18. Keeps in the cake tin for up to 4 days.
