Ingredients

  • 300g butter, plus some butter for greasing
  • 300 g light muscovado sugar
  • 3 large eggs
  • 1½ tsp baking powder
  • 85g cocoa powder
  • 225g flour
  • 225 ml sour cream
  • 300 ml pot of double cream
  • 5 tablespoons dulce de leche or caramel sauce
  • 25g caramel flavored chocolate, finely chopped (we used Lindt)

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Lightly grease 2 x 23cm loose-bottomed cake tins and line with a circle of baking paper.
  3. Mix butter and sugar until a light, creamy mixture forms.
  4. Add the eggs one at a time, beating well between each addition.
  5. Add baking powder, cocoa and a third of the flour.
  6. Mix well and then stir in half of the sour cream.
  7. Add flour and sour cream alternately and mix everything well.
  8. Pour the dough into the prepared molds and smooth it out with a spoon.
  9. Bake for 30 minutes or until cakes are firm to the touch and a skewer inserted into the center comes out clean.
  10. Allow to cool in the tins for 5 minutes, then turn out onto a wire rack and allow to cool completely.
  11. When ready to serve, whip the cream with 2 tablespoons dulce de leche until soft peaks form.
  12. Place 1 cake on a serving plate and spread with half the cream.
  13. Drizzle the remaining dulce de leche over it.
  14. Top with the other cake.
  15. Spread the remaining cream on top.
  16. Sprinkle with the chocolate.
  17. Refrigerate until serving.
