Ingredients

  • 175g unsalted butter, softened, plus a little butter for greasing
  • 300g golden powdered sugar
  • 3 large eggs, beaten
  • 75g self-raising flour
  • 200g plain flour
  • 1 tsp baking soda
  • 75g cocoa
  • 200 ml sour cream, at room temperature
  • 50 g full-fat cream cheese, at room temperature
  • 250g unsalted butter, softened
  • 500g powdered sugar
  • 150g full-fat cream cheese
  • 3 very ripe passion fruits

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas. 4. Grease the bottom of a 20 cm springform pan and line it with baking paper.
  2. Mix the butter and icing sugar together until the mixture is light, light and fluffy – the easiest way to do this is with a stand mixer or an electric hand mixer.
  3. Gradually add the egg, one at a time, beating well between each addition.
  4. Sift both flours, baking soda and cocoa into a bowl.
  5. Add half of the sifted dry ingredients to the egg mixture and fold in with a large metal spoon.
  6. In another bowl, stir together sour cream and cream cheese until smooth.
  7. Add half of the sour cream mixture to the cake batter and fold in.
  8. Repeat the process with the remaining flour and sour cream and stir until smooth.
  9. Pour the batter into the prepared cake pan.
  10. Bake on the middle rack for 1 hour or until a skewer inserted into the center of the cake comes out clean.
  11. Allow the cake to cool in the tin for 10 minutes before turning it out onto a wire rack and removing the baking paper.
  12. In the meantime, make the glaze.
  13. Using an electric mixer, beat the butter until light and soft.
  14. Add the powdered sugar and mix until smooth.
  15. Add the cream cheese and mix again.
  16. Strain the passion fruit juice, collecting the pulp and seeds.
  17. Add the juice to the glaze.
  18. To assemble, divide the cake into three even layers and place the bottom layer on a cake stand or plate.
  19. Spread a third of the icing on the bottom layer and spread it towards the edges.
  20. Repeat with remaining 2 layers of cake and frosting, finishing with a layer of frosting.
  21. Top with the pulp and seeds of the passion fruit.
  22. Serve immediately.
  23. Will keep for 3 days refrigerated – but bring back to room temperature before serving.
