  • 200g ready-to-eat dried apricots
  • 4 tbsp brandy

  5. Place the ground almonds in a bowl and sift the cocoa, flour and baking powder over them. Mix everything together.

  8. Cut half of the apricots into small pieces. Cut the chocolate into large pieces.
  9. Lightly stir the flour mixture into the cake mix, followed by the apricots and chocolate.
  10. Add the remaining whole apricots to the bowl and top with the honey.
  11. Add the pudding mixture and smooth it out.
  12. Cover with double-thick, buttered baking paper and tie tightly.
  13. Cut off the excess paper, then wrap it in foil and tuck the ends under the edges of the paper.
  14. Place the basin in a large pot and pour boiling water into the pot until it comes halfway up the edge of the basin.
  15. Cover and steam until firm to the touch, 21-2 hours.
  16. Towards the end of the cooking time, prepare the sauce.
  17. Break up the chocolate and place it in a small saucepan along with the cream and brandy (if using).
  18. Heat gently, stirring gently, until the mixture is smooth and shiny.
  19. Let the pudding cool in the bowl for 10 minutes.
  20. Remove and serve with chocolate sauce and cream or good vanilla ice cream.
