Ingredients

  • 300 g frozen raspberries (no need to thaw)
  • 1 tbsp brandy (optional)

  • 300 ml fresh vanilla pudding

  • 25g cocoa
  • 50g powdered sugar
  • 6 blanched almonds

Preparation steps

  1. Mix the raspberries with the brandy (if using) and raspberry jam, then spoon into the bottom of 6 glasses.
  2. Break the chocolate into a Pyrex bowl and then melt it in the microwave on high for 1-2 minutes. You can also place the bowl over a pot of simmering water and stir until melted.

  5. Beat 2 egg whites until stiff, then gradually stir in 50 g of powdered sugar until a thick, shiny mixture is formed.
  6. Mix 100 g ground almonds and 25 g cocoa with another 50 g powdered sugar and then stir into the egg white mixture.
  7. Divide the mixture into 12 pieces, wet your hands, and then form each piece into a ball.
  8. Place slightly flat on the baking tray, spaced apart.
  9. Top each with a blanched almond, then bake for 10 minutes, until firm but still soft in the center.
  10. Let cool and dust with powdered sugar.
  11. Can be made 2 days in advance and stored in an airtight container.
