Ingredients
- Leaves from 2 Earl Gray tea bags
- 100 ml hot milk
- 250g good dark chocolate (we used a 78% bar)
- 200 g butter, diced
- 140g ground almonds
- 6 eggs, separated
- 200g powdered sugar
- Cocoa, powdered sugar and crème fraîche or cream for serving
Preparation steps

Preheat the oven to 180°C/160°C fan/gas 4.

Grease the bottom and sides of a deep, 22cm loose-bottomed baking tin and line with baking paper so that the paper extends about 2.5cm over the sides.

Stir the Earl Gray tea into the hot milk.

Melt the chocolate, butter and a pinch of salt in a bowl over a saucepan of barely simmering water.

Stir in the ground almonds, then add the egg yolk and the milk tea and leaves.

Beat the egg white until stiff, then stir in the powdered sugar until stiff again.

Fold the egg whites into the chocolate mixture and scrape into the mold.

Bake for 30-35 minutes – it should still wobble slightly. Then let it cool completely in the mold.

Carefully remove from the mold and place on a serving plate.

Dust all over with cocoa and powdered sugar and then serve in slices with crème fraîche or cream.
