Ingredients

  • 4 eggs
  • 100g powdered sugar
  • 100g self-raising flour
  • 50g cocoa, plus extra for dusting the can, sifted
  • 85g butter, melted, plus a little butter for greasing
  • 50 ml espresso or strong coffee
  • Mix 2 tbsp Tia Maria into the coffee
  • 3 eggs, separated
  • 50g powdered sugar
  • 175 g dark chocolate (70% cocoa content)
  • 200 ml cream
  • 142 ml double cream
  • 100 g dark chocolate (70% cocoa content)
  • 50g butter
  • 1 tbsp golden syrup
  • 1 tbsp Tia Maria
  • 1 tbsp espresso
  • Cocoa beans covered in chocolate
  • dark and white chocolate curls

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Butter a 22 x 31 cm or similar jelly roll tin and then line it with buttered baking paper.
  3. Add 1 tablespoon of cocoa, rotate the can until evenly coated, then tap out the excess cocoa.
  4. To make the sponge cake, beat eggs and sugar with electric mixers for 7 minutes until thick enough to leave a trace.
  5. Fold in the flour and cocoa, then stir in the butter and fold in.
  6. Pour the mixture into the tin and bake for 10 minutes until just set.
  7. Cool the sponge under a clean tea towel.
  8. To make the mousse, beat the egg yolks with the sugar until thick and light.
  9. Melt the chocolate and lightly whip the cream until it just holds its shape.
  10. Quickly stir half of the cream and all of the chocolate into the egg mixture.
  11. Carefully fold in the remaining cream.
  12. Beat the egg whites until foamy and then fold in.
  13. Grease a 1.4 liter basin with a little oil.
  14. Line the basin with cling film and let it overhang.
  15. Make the pudding by cutting out a sponge cake circle to fit in the bottom of the bowl and placing it inside.
  16. Cut out seven slanted rectangles about 10 cm long from the sponge cake dough and stick them together tightly around the bowl.
  17. Sprinkle with most of the coffee-Tia Maria mixture.
  18. Fill the bowl halfway with the mousse.
  19. Using the remaining sponge cake dough, place a precisely fitting cake circle on top of the mousse.
  20. Sprinkle with the remaining coffee mixture.
  21. Spoon in the rest of the mousse.
  22. Cover with the excess cling film and refrigerate for at least 4 hours (ideally overnight) until the dough is firm.
  23. Turn the pudding out onto a plate.
  24. For the topping, gently heat all the ingredients in a bowl over a pan of boiling water until the chocolate melts.
  25. Allow to cool, stirring occasionally, until the mixture is thick and glossy.
  26. Spread the icing over the resulting pudding.
  27. Top with the chocolate-covered cocoa beans and chocolate chips.
