  • 4 sweet potatoes
  • 2 tbsp olive oil
  • 1 tbsp chipotle paste
  • Zest and juice of 1 lime
  • a handful of coriander leaves for serving

  5. Remove the potatoes from the oven and brush them all over and into the slits with the chipotle mixture.
