- 4 small sweet potatoes, cut into fries
- 2 tbsp olive oil
- 2 tsp dried oregano
- 1 large onion, cut into rough rings
- 2 tablespoons polenta or cornmeal
- small packet of parsley, chopped
- Zest and squeeze 1 lemon
- 1 fat garlic clove, crushed
- 2 tbsp white wine vinegar
- Pack of 4 minute steaks (approx. 500 g)
- Preheat the oven to 200°C/180°C fan/gas 6.
- Mix the sweet potatoes with 2 teaspoons of oil, half of the oregano and some spices.
- Arrange the sweet potatoes in a single layer on a flat baking sheet lined with parchment paper.
- Add 1 teaspoon of oil to a bag of spices, add the onion rings and shake until coated.
- Put the polenta with the onion rings in the bag and shake again.
- Arrange the breaded onion rings on another tray.
- Cook the sweet potatoes and onion rings in the oven for 35 minutes, turning them halfway through.
- Mix the remaining oil, parsley, lemon zest and juice, garlic, vinegar and oregano with spices.
- Spread half of the dressing over the steaks.
- Sear the steaks for 30 seconds on each side.
