  • 200g strawberries
  • 1 tbsp golden powdered sugar or to taste
  • a few drops of Angostura bitters
  • 2 gelatin sheets (avoid gelatin)
  • 150ml Pimm’s No. 1
  • 5 large egg yolks
  • 100g golden powdered sugar
  • 142ml carton for whipping or whipping cream

  4. Add egg yolks and sugar to mixing bowl (remove from heat). Mix with electric mixers until thick and pale, about 3 minutes. Add the remaining Pimm’s and stir for another minute. Place the bowl over the barely simmering water and whisk continuously until the mixture has at least doubled in volume and resembles the head of a glass of Guinness.
  5. Remove from heat, pour in the gelatin mixture and beat for 1 minute. Place the bowl in a sink of ice-cold water and let cool for about 10 minutes, stirring occasionally.
  6. Whip the cream until soft peaks then stir it into the cooled zabaglione. Pour into 4 large wine glasses, leaving about a centimeter of rim free for the strawberries. Cover loosely and refrigerate for at least 2 hours.
  7. Shortly before serving, add the strawberries and their juice to the top of the glasses.
