Ingredients
- 2 tsp rapeseed oil
- 2 red onions (320 g), finely chopped
- 2 celery sticks (approx. 150 g), cut into slices
- 1 tbsp hot chili powder
- 1 tbsp ground coriander
- 1 tsp ground cumin
- 3 cloves of garlic, finely grated
- 500g cardboard passata
- 2 x 400g cans of three bean salad in water
- 2 tsp gluten-free vegetable stock powder
- 20 g coriander, leaves picked and chopped
- 50g fine corn flour
- 100g gram (chickpea) flour
- 1 tsp gluten-free baking powder
- 1 tsp hot chili powder
- 1 egg
- 150 ml organic yogurt
- 50 ml milk
- 50 g mature cheddar, coarsely grated
- 1 small red onion (approx. 80 g), finely chopped
- 12 pitted Kalamata olives, roughly chopped
- 4 tsp balsamic vinegar
- 2 x 198g cans of sweetcorn, drained
- 1 bag of mixed leaf lettuce
Preparation steps

Heat the oil in a nonstick skillet over medium-high heat and sauté the onions and celery for 8 minutes, stirring frequently.

Stir in the spices and garlic, then add the passata, bean salad (along with the liquid from the cans) and stock.

Cover and simmer for 10 minutes, then add the cilantro.

Place in a shallow ovenproof dish and allow to cool slightly.

Preheat the oven to 190°C/170°C fan/gas 5.

Place corn flour, chickpea flour, baking powder and chili powder in a bowl and mix well.

Whisk the egg, yogurt and milk together in a separate bowl, then pour into the dry ingredients and stir to form a dough.

Stir in the cheese, then pour over the chili beans and bake for 30-35 minutes, until the cornbread is risen and golden brown.

Mix half of the corn salad ingredients together and serve with half of the chilies, reserving the rest for another day.

The cake will keep covered and refrigerated for four days.
