  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red pepper, cut into pieces
  • 2 garlic cloves, crushed
  • 1 tsp paprika
  • 400g ground beef
  • 200 ml beef broth
  • 400 g canned chopped tomatoes
  • 1 tsp golden powdered sugar
  • 1 tbsp hot sauce (we used Franks)
  • 400g can of kidney beans in chili sauce
  • 50 ml milk
  • 4 large zucchini, cut into rough pieces
  • 100g plain flour
  • Oil, for deep frying
  • 50g Parmesan, grated
  • 50g mozzarella, grated
  • Chili, for seasoning

Preparation steps

  1. First prepare the chili by heating the oil in a deep pan.
  2. Cook the onion over low heat until soft, about 5 minutes.
  3. Add the red pepper, garlic and paprika and stir for a few minutes.
  4. Increase the heat, add the minced meat and fry until browned all over.
  5. Add beef broth, tomatoes, sugar and hot sauce and season well with salt.
  6. Bring to a boil, then reduce heat to a gentle simmer and cook for 30 minutes.
  7. Five minutes before the chilies are ready, add the kidney beans with the sauce and stir to warm through.
  8. Keep over low heat until ready to serve.
  9. In the meantime, pour the milk into a large bowl and add the zucchini pieces to the milk.
  10. Place the flour on a large plate and season well.
  11. Take each zucchini piece and roll it in the seasoned flour, blotting off any excess flour.
  12. Heat the oil in a wok or large pot (until it reaches 180°C on a thermometer or until a piece of bread browns in 10 seconds).
  13. Fry the zucchini in batches for 5-6 minutes until golden brown.
  14. Transfer to kitchen paper and sprinkle with sea salt flakes.
  15. To serve, sprinkle the zucchini chips with chili and sprinkle with Parmesan and mozzarella.
