  • 2 large sweet potatoes
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed

  • 400 g canned chopped tomatoes

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Prick the sweet potatoes with a fork and bake for 40-45 minutes or until tender and cooked through.
  3. Meanwhile, heat the oil in a deep skillet and fry the onions until softened, about 10 minutes.
  4. Add garlic and pepper and stir for 1 minute.
  5. Add the tomatoes, simmer gently, season well and simmer for 10-15 minutes.
  6. To make the salsa, mix the avocado, chili and coriander in a small bowl.
  7. Add the mixed beans to the pan with the red peppers.
  8. Heat for 5 minutes and season to taste.
  9. Cut each baked potato in half, ladle the chili over it and spoon the salsa over it.
  10. If desired, add a dollop of coconut yogurt to each half before serving.
