Ingredients

  • 150g pack of Brazil nuts, half whole, half chopped
  • thumb-sized piece of ginger, peeled
  • 1 clove of garlic
  • Juice 1 lime
  • 250g cup of coconut milk yoghurt (we used Coyo Natural)
  • 4 tbsp pomegranate molasses
  • 6 free-range chicken thighs or quarters
  • 2 tbsp rapeseed oil
  • 2 large eggplants, sliced ​​lengthwise
  • 1 pomegranate, seeds only

Preparation steps

  1. Place the whole Brazil nuts in a food processor with the ginger, garlic and lime juice.
  2. Mix into a paste, then add coconut yogurt and molasses.
  3. Flash briefly to combine.
