Ingredients

  • 1 heaped teaspoon Dijon mustard
  • 140 g butter, soft
  • 2 chickens, each approx. 1½kg/3lb 5oz
  • Whole garlic bulb, cut in half
  • 175 ml white wine
  • 300 ml chicken broth
  • 500g bag of Chantenay or baby carrots
  • a small handful each of chopped tarragon and parsley

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Mix mustard and butter, then season well.
  3. Place the chickens in a large roasting pan. Then, starting at the end of the neck, use your fingers to pull the skin away from the breast and thigh meat.
  4. Stuff the butter under the skin, reserving 1 tablespoon for later.
  5. Place half of the garlic bulb in each well.
  6. Season generously, cover with foil, then roast for 1 hour, uncovered for the final 20 minutes, until crispy and golden brown.
  7. Lift the birds onto a board, place the pan on the stove and splash in the wine.
  8. Allow to simmer for 5 minutes, scraping up the pieces of meat with a wooden spoon, then add the stock and bring to the boil.
  9. Add the carrots, cover with foil, then cook for 5 minutes. You can do this in advance.
  10. Add the peas and simmer for a few minutes until soft.
  11. Shortly before serving, stir in the reserved mustard butter, the chopped herbs and the remaining juice and season to taste.
  12. If you want, put everything on a platter and bring it to the table – or just put the chicken back in the roasting pan.
