Chicken with cardamom butter

Ingredients
- 2 cloves of garlic, coarsely chopped
- thumb-sized piece of ginger, chopped
- 2 green chilies, chopped (if you like it spicy, leave the seeds in)
- small bunch of coriander, leaves picked off, stems roughly chopped
- 3 tbsp ghee or vegetable oil
- 2 onions, sliced
- 2 teaspoons each of turmeric, garam masala and ground cumin
- 1 teaspoon ground fenugreek
- 4 chicken breasts, cut into 2½ cm cubes
- 4 cloves
- 12 cardamom pods, seeds removed
- 1 cinnamon stick
- 400g canned tomatoes
- 150 ml cup yoghurt
- 50 ml double cream
- Chapatis and rice to serve
Preparation steps
- Place the garlic, ginger, chillies and coriander stalks with a good pinch of salt in the small bowl of a food processor and mix into a fine paste – or grind into a paste with a pestle and mortar.
- Heat 2 tablespoons ghee or oil in a large pan, add the onions and fry slowly for 15-20 minutes until golden brown and caramelized. Add the garlic-ginger paste, increase the heat and cook for another 5 minutes. Add the ground spices and cook for another 2 minutes until fragrant. Pour the spicy onion mixture from the pan into a bowl.
- Add the remaining ghee or oil to the pan and fry the chicken over medium-high heat until browned all over. Place in a bowl, cover and set aside.
- Add the onion mixture back to the pan along with all the spices, tomatoes and a can of water (400ml). Bring to a boil, then cover and simmer gently for 40 minutes.
- Return the chicken to the pan and cook, uncovered, for another 10 minutes until the sauce has thickened and the chicken is cooked through. Stir in the yogurt and cream, season well and sprinkle with coriander leaves. Serve with chapatis and rice.
