Ingredients

  • ½ tbsp sunflower oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely grated or crushed
  • thumb-sized piece of ginger, peeled and finely grated
  • 4 boneless, skinless chicken thighs, cut into small pieces
  • 5 tbsp tikka curry paste
  • 227 g canned chopped tomatoes
  • 2 tsp light brown soft sugar
  • 100 ml cream
  • 350g flour, plus some flour for dusting
  • 175g cold, unsalted butter, cut into cubes
  • 1 tsp caraway (optional)
  • 1 tsp cumin (optional)
  • 1 egg yolk (freeze the white for another recipe) plus 1 beaten egg

Preparation steps

  1. Heat the oil in a frying pan over medium-high heat and fry the onions until softened, about 6-8 minutes.
  2. Stir in the garlic and ginger and cook for another minute before stirring in the chicken pieces.
  3. Cook for 8-10 minutes until the chicken is golden brown all over.
  4. Add the curry paste, stir and then mix in the chopped tomatoes and brown sugar.
  5. Cook for 10-12 minutes until the liquid is reduced and a fairly dry curry forms.
  6. Stir in the cream and cook for another 5 minutes until slightly thickened – you want the sauce to be thick so it doesn’t seep out of the finished pie.
  7. Let cool down.
  8. To make the dough, place the flour in a food processor along with the butter, cumin, and cumin (if using) and pulse into fine crumbs. (You can also do this in a bowl by rubbing everything together with your fingertips.)
  9. Stir in the egg yolk and, if necessary, a dash of cold water until a dough forms.
  10. Wrap and refrigerate for 20 minutes while filling cools.
  11. Preheat the oven to 200°C/180°C fan/gas 6.
  12. Roll out the chilled dough on a lightly floured surface until it is about ½ cm thick.
  13. Cut out discs with a 10-12cm cookie cutter or use a small plate as a template and cut out with a knife. (There should be about eight in total.)
  14. Place a few spoonfuls of the filling on each circle of dough, slightly off-center, then brush the filling with the beaten egg and fold the dough so that the edges meet.
  15. Press the edges together or seal with a fork.
  16. Place on a baking tray, cut a few small slits in the top of each patty, brush with the remaining beaten egg and bake for 20-25 minutes until crisp and golden brown.
  17. Let cool slightly and then serve.
  18. Can be kept refrigerated for up to three days.
