  • 4 tbsp vegetable oil
  • 25g butter
  • 4 onions, coarsely chopped
  • 6 tablespoons chicken tikka masala paste (use store-bought or make your own – see recipe below)
  • 2 red peppers, deseeded and cut into pieces
  • 8 boneless, skinless chicken breasts, cut into 2½ cm cubes
  • 2 x 400g cans of chopped tomatoes
  • 4 tbsp tomato paste
  • 2-3 tbsp mango chutney
  • 150 ml double cream
  • 150 ml natural yogurt
  • chopped coriander leaves for serving


Make your own curry paste
Puree everything in a small food processor
5 cloves of garlic, 1 large piece of fresh garlic
Ginger root, roughly chopped, 1 red

2 teaspoons each ground cumin and coriander,
1 teaspoon each of turmeric, paprika and

  6. Let the chicken cook for 2 minutes
  7. Add tomatoes, puree and 200 ml water to the casserole
  8. Cover the casserole with a lid and simmer gently, stirring occasionally, until the chicken is cooked through, 15 minutes
  9. Remove the lid and stir together the mango chutney, cream and yogurt
  10. Warm the mixture gently
  11. Season the dish with salt and pepper
  12. Set aside part of the mold to freeze
  13. Sprinkle the remaining mixture with coriander leaves
  14. Serve the dish with basmati rice and naan bread
