Chicken Chow Mein

  • 3 cloves of garlic, crushed
  • a good piece of fresh ginger root, grated
  • 1 red chili pepper, deseeded and chopped
  • 1 tbsp soy sauce
  • 2 tbsp tomato paste
  • 2 chicken breasts, cut into rough strips
  • 3 blocks dried egg noodles
  • ½ head broccoli, cut into florets
  • 3 carrots, cut into thin sticks
  • 1 tbsp vegetable oil
  • 300g pack of bean sprouts
  • 3 spring onions, halved and cut into long strips
  • 1 tbsp oyster sauce


Simple Thai noodle soup for two
Bring 1 liter of chicken broth to the boil. Add the garlic,
ginger and chili, 1 tsp sugar and 2-3 tsp
Thai curry paste, depending on spiciness
you like it. Let simmer for 5 minutes. add broccoli,

  10. Warm the mixture
  11. Mix oyster sauce with 2 tablespoons of water
  12. Stir the oyster sauce mixture into the bowl just before serving
