Ingredients

  • 6 boneless, skinless chicken breast fillets, diced
  • 3 carrots, chopped
  • 3 potatoes, peeled and diced
  • 2 celery sticks, chopped
  • 2 teaspoons chopped fresh thyme or 1 teaspoon dried
  • 850 ml hot chicken stock
  • 50g butter
  • 2 onions, chopped
  • 50g plain flour
  • 300 ml milk
  • Juice of 1 lemon
  • 2 tbsp chopped parsley
  • 4 thin slices of ham, cut into strips
  • 500g pack of shortcrust pastry
  • 1 egg, beaten

Preparation steps

  1. Place the chicken in a large pan with the carrots, potatoes, celery, half of the thyme and spices.
  2. Add broth and bring to a boil.
  3. Reduce heat, cover and simmer gently for 15 minutes.
  4. Place a sieve over a large bowl, pour in the contents of the pan and discard the thyme.
  5. Reserve 600ml/1 pint stock (the rest can be frozen).
  6. Rinse the pan, heat it again and melt the butter.
  7. Cook the onions until softened, about 5 minutes.
  8. Gradually stir in the flour and then the reserved stock until you have a smooth, thick sauce.
  9. Add the milk and simmer for 2 minutes.
  10. Remove from the heat and stir in the remaining thyme, lemon juice and parsley.
  11. Season.
  12. Combine chicken, vegetables, and ham in a deep 5-quart ovenproof dish, preferably with a rim or lip.
  13. Pour the sauce over it and let it cool slightly.
  14. Preheat the oven to 200°C/gas 6/fan 180°C.
  15. Roll out the dough about 2 inches larger than the top of the pan.
  16. Cut a 2.5 cm wide strip out of the dough all around.
  17. Brush the edge of the mold with egg and press the strip all around.
  18. Brush with egg, lift the dough on top and press the edges so that it seals well.
  19. Cut off the excess dough and mark the edge of the dough all around with a fork.
  20. Make 4 small slits in the middle.
  21. Brush with egg and bake for 25-30 minutes until crispy and golden brown.
