Ingredients

  • 85g self-raising flour
  • 140g wholemeal flour
  • 1 teaspoon Baking powder
  • 175g golden powdered sugar
  • 4-5 cardamom pods
  • Zest 1 small orange
  • ½ tsp cinnamon
  • ½ tsp spice mixture
  • ¼ tsp nutmeg
  • 140g butter, cut into pieces
  • 100g pecans
  • 85g raisins, preferably golden or green
  • 85g sultanas
  • 85g dried cranberries
  • 1 egg
  • 125 ml milk
  • Ribbon for decorating
  • 85g frozen cranberries, thawed
  • 25g golden powdered sugar

Preparation steps

  1. Line an 18cm deep, loose-bottomed round cake tin with butter and line the base.
  2. Preheat the oven to 170°C/fan 150°C/gas 3.
  3. For the cake, mix together the flour, baking powder and sugar.
  4. Slit open the cardamom pods and remove the tiny seeds (discard the pods).
  5. Using a pestle and mortar, grind the seeds into powder and then stir them into the flour mixture along with the orange peel and any other spices.
  6. Rub the butter into the mixture until it resembles coarse crumbs.
  7. Roughly chop half of the pecans and stir into the mixture with the raisins, sultanas and cranberries.
  8. Whisk the egg, pour in the milk and stir into the cake mixture.
  9. Pour the mixture into the mold, smooth the top, and sprinkle over the remaining pecan halves.
  10. Bake for 45 minutes, then reduce the heat to 150°C/fan 130°C/gas 2 and bake for a further 45 minutes.
  11. While the cake is baking, prepare the topping.
  12. Pat the cranberries dry on kitchen paper and then place them in a small bowl with the sugar.
  13. After the second 45 minutes of baking, spoon the sugared cranberries over the cake.
  14. Return to the oven for another 15-20 minutes, or until the cranberries are sticky and a skewer inserted into the cake comes out clean.
  15. Let the cake cool in the tin and then turn it out onto a wire rack.
  16. Decorate with ribbon.
  17. It’s best to keep the cake overnight to allow the flavors to develop before cutting.
  18. Store in an airtight container for up to 2 weeks.
