Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 Bramley apples, about 140/5 ounce each, peeled
  • 3 x 450g packs of good quality pork sausage
  • 2 x 200g packs of vacuum packed chestnuts, coarsely chopped
  • small bunch of parsley, leaves roughly chopped
  • small bunch of sage, leaves roughly chopped
  • small bunch of thyme, leaves stripped
  • 1 egg
  • 100g white breadcrumbs
  • 175g fresh or frozen cranberry
  • 24 slices streaky bacon
  • Butter for greasing

Preparation steps

  1. Heat the oil in a large frying pan and then lightly fry the onion for 5 minutes until softened.
  2. Finely chop the apples either by hand or in a food processor.
  3. Squeeze the sausage meat out of the sausages into a large bowl.
  4. Add all other ingredients except the cranberries and streaky bacon to the bowl with the sausage meat.
  5. Season generously and then mix well with your hands.
  6. Weigh out 450 g of the filling and mix in a handful of cranberries.
  7. Stuff the neck of the turkey with the cranberry stuffing.
  8. To assemble, grease and season a large sheet of aluminum foil.
  9. Use the back of a kitchen knife to slightly pull the bacon slices apart.
  10. Place 12 slices of bacon on top of each other on the foil.
  11. Spread half of the filling mixture evenly over the bacon, leaving a border of approx. 3 cm free.
  12. Scatter half of the cranberries over the filling and pat in.
  13. Tuck the long edges of the bacon over the filling.
  14. Using the foil, roll the filling into a log. Repeat the process to make a second roll.
  15. Preheat the oven to 190°C/fan 170°C/gas 5.
  16. Place the foil-wrapped rolls on a roasting tray and roast for 45 minutes.
  17. Unwrap the rolls, drain the juices, then finish frying for 15 minutes, until the bacon is crispy.
