Ingredients
- 450g self-raising flour
- 1 tsp baking soda
- 100 g cold butter, diced
- 2 tbsp powdered sugar
- 284 ml buttermilk
- 2 Table spoons of milk
- 2 tsp vanilla extract
- 100g glazed cherries, chopped
- Clotted cream and cherry or strawberry jam for serving
Preparation steps
- Preheat oven to 220°C/200°C fan/gas 7.
- Place the flour, ½ teaspoon salt, bicarb and butter in a bowl and rub together with your fingertips until the mixture resembles breadcrumbs.
- Mix in the sugar.
- Quickly stir in buttermilk, a dash of milk, vanilla and cherries and mix to form a soft dough.
- Press out onto a lightly floured surface until about 3cm thick.
- Cut out with 5cm cookie cutters.
- Place on a lightly floured baking sheet.
- Brush with the remaining milk.
- Bake for 12-15 minutes until the dough is golden brown and well risen.
- Serve with clotted cream and jam.
