  • 450g self-raising flour
  • 1 tsp baking soda
  • 100 g cold butter, diced
  • 2 tbsp powdered sugar
  • 284 ml buttermilk
  • 2 Table spoons of milk
  • 2 tsp vanilla extract
  • 100g glazed cherries, chopped
  • Clotted cream and cherry or strawberry jam for serving

Preparation steps

  1. Preheat oven to 220°C/200°C fan/gas 7.
  2. Place the flour, ½ teaspoon salt, bicarb and butter in a bowl and rub together with your fingertips until the mixture resembles breadcrumbs.
  3. Mix in the sugar.
  4. Quickly stir in buttermilk, a dash of milk, vanilla and cherries and mix to form a soft dough.
  5. Press out onto a lightly floured surface until about 3cm thick.
  6. Cut out with 5cm cookie cutters.
  7. Place on a lightly floured baking sheet.
  8. Brush with the remaining milk.
  9. Bake for 12-15 minutes until the dough is golden brown and well risen.
  10. Serve with clotted cream and jam.
