- 300g mixed dried fruits
- 200 g glazed cherries, 85 g halved (we used sour cherries)
- 50g mixed peel
- 1 medium carrot, finely grated
- Zest and squeeze 1 lemon
- 1 orange, peeled and cut out into segments
- 100g light muscovado sugar
- 1 tsp spice mix
- 100 ml brandy
- 50 ml Disaronno
- 100g butter, frozen, plus 25g softened butter and a little butter for greasing
- 2 large eggs, beaten
- 50 g blanched almonds, half chopped each
- 50 g pecans, half each chopped
- 100g self-raising flour
- 175g fresh white breadcrumbs
- 2 tbsp golden syrup
- Holly sprig to decorate (optional)
- Place the mixed fruit, halved glazed cherries, mixed peel, carrot and lemon and orange peel in a bowl with the sugar and spices.
- Add lemon juice and alcohol and mix well.
- Cover and let soak overnight.
- Preheat the oven to 160°C/140°C fan/gas 3 and place a full kettle to boil.
- Grease a 1.5 liter pudding tin and place a disc of baking paper in the bottom.
- Stir the eggs into the fruit mixture, then stir in the chopped nuts, flour and breadcrumbs.
- Finally, grate in the frozen butter and stir the mixture frequently to ensure it is evenly distributed.
- For the topping, mix softened butter and golden syrup and spread over the bottom of the bowl.
- Add the whole cherries, orange wedges, and whole nuts, breaking the pecans in half as you add them.
- Try not only to put a thick layer of fruit and nuts on the bottom, but also spread some on the side.
- Pour in the pudding mixture, smooth the surface and then cover with baking paper and foil.
- Tie the lid with string or an extra-large rubber band, then place it in a roasting pan and pour in the water from the kettle.
- Cover the whole thing with foil to seal out all the steam and then put it in the oven for 6 hours.
- This makes a light pudding. If you prefer a darker pudding, cook for up to 8 hours.
- Can be stored in the refrigerator for 1 month.
- If you want it to last longer, leave out the orange segments.
- To serve, simmer in a large pan with the saucer upside down on the bottom for two hours, then remove and decorate with holly if desired.
- Serve with brandy syrup cream (see “Suitable”).
