  • 250g unsalted butter, softened
  • 185g powdered sugar
  • 4 medium eggs
  • 250 g flour
  • 1½ tsp baking powder
  • a splash of milk
  • 200g dark chocolate, chopped into small pieces
  • 425 g pitted morello cherries from a can, drained

Preparation steps

  1. Mix the butter and sugar in a mixer with the blade attachment until fluffy.
  2. Add the eggs one at a time and mix for 4 minutes.
  3. Add flour, baking powder and milk and mix at low speed for another 4 minutes.
  4. Mix in the chocolate.
  5. Preheat the oven to 200°C/180°C fan/gas 6.
  6. Cut 16 squares of parchment paper large enough to line the holes of your muffin tins.
  7. Using a piping bag or spoon, fill the mixture into the muffin cups.
  8. Distribute the cherries evenly over the muffins, gradually pressing them into the mixture.
  9. Bake for 25 minutes.
