  • 200g butter, well softened, plus a little butter for greasing
  • 200g golden powdered sugar
  • 100g ground almonds
  • 100g self-raising flour
  • 1 teaspoon Baking powder
  • ½ tsp almond extract or essence
  • 4 large eggs
  • ½ a 340g jar of sour cherry jam
  • 175g powdered sugar
  • 5-6 tsp water or lemon juice
  • 1 tbsp ready-roasted almond flakes

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas 4 and make sure there is a shelf in the middle.
  2. Grease the bottom of a 2 x 20 cm round sandwich tin and line it with baking paper.
  3. Mix all the cake ingredients with an electric mixer with a pinch of salt until smooth, then pour into the molds and smooth the bottom.
  4. Bake for 30 minutes or until golden brown and springy. Do not open the oven until 25 minutes of cooking time have elapsed.
  5. When ready, let the sponges cool for a few minutes, then turn them out of the tins and let them cool completely on a wire rack. Make sure the top of one of the cakes is facing up because you want a smooth surface for frosting later.
  6. After cooling, place a sponge cake base on a serving plate and spread with jam.
  7. Place the second sponge cake on top.
  8. Sift the powdered sugar into a large bowl.
  9. Add water or lemon juice and stir until a smooth, thick mixture forms.
  10. Spread evenly over the top and allow to drip down the sides.
  11. Sprinkle with the nuts and allow to set for a few minutes before cutting.
