  • approx. 700 g cherries, pitted
  • 100g unsalted butter at room temperature
  • 100g golden powdered sugar
  • 100 g ground almonds
  • 1 egg
  • Splash of Disaronno or Marsala, if available
  • 2 x 250g cans of mascarpone
  • Zest and squeeze 1 lemon
  • 140 g powdered sugar, plus a little sugar for dusting

Preparation steps

  1. Roll out the dough on a lightly floured surface so that it is just thinner than a £1 coin.
  2. Use this to line a 22 cm tart tin with a loose bottom and leave an overhang on the sides.
  3. Cool on a baking sheet in the refrigerator.
  4. To make the frangipane, puree everything in a food processor until well combined.
  5. Preheat oven to 200°C/180°C fan/gas 6.
  6. Line the tart base with baking paper and beans.
  7. Bake for 20 minutes.
  8. Remove parchment and beans.

  10. Continue baking for 10 minutes until the dough is slightly biscuit-like.

  19. Dust heavily with powdered sugar.
