Cheesy Turkey Milanese

  • 4 tbsp flour
  • 1 egg
  • 3 tbsp olive oil
  • 100g fresh or dried breadcrumbs
  • 4 rosemary sprigs, leaves picked and chopped
  • 4 turkey steaks, about 500 g in total, if thick, thin them out with a rolling pin
  • 3 thick cloves of garlic, crushed
  • 2 x 400g cans of chopped tomatoes
  • small bunch of basil, leaves picked off
  • 125g ball mozzarella, drained and sliced, or a handful of another melting cheese such as Cheddar or Gruyère
  • 350g spaghetti

Preparation steps

  1. Put the flour in a bowl with some spices.
  2. Whisk the egg in another bowl with a splash of water.
  3. Place breadcrumbs and rosemary in another bowl.
  4. Drizzle 1 tablespoon of oil over the top and rub with your fingers until the breadcrumbs are slightly moist.
  5. Dredge the turkey steaks in flour, dusting off excess flour.
  6. Dip the turkey steaks in the egg and then in the breadcrumbs. Press firmly on them so that they stick better.
  7. Place on a plate and refrigerate while you prepare the sauce.
  8. Heat the remaining oil in a large pan.
  9. Add the garlic and sizzle for 30 seconds, then add the tomatoes.
  10. Season and simmer for 15 minutes until the sauce is thick.
  11. If the taste is too spicy, add a pinch of sugar.
  12. While the sauce is cooking, preheat the oven to 200°C/180°C fan/gas 6.
  13. Place the turkey steaks on a baking sheet and bake for 10 minutes.
  14. Remove from the oven and top with mozzarella slices.
  15. Return to the oven for another 5 minutes, until the turkey is cooked through and the cheese is melted.
  16. Cook the spaghetti according to the package instructions.
  17. Drain and then stir through the tomato sauce.
  18. Divide onto plates.
  19. Top with a turkey steak and plenty of basil leaves.
