- 6 large baking potatoes
- 85g butter
- 1 tbsp English mustard
- 6 large spring onions, finely chopped
- 175g mature cheddar, grated, plus 85g for sprinkling
- 2 x 300g cans of red kidney beans, drained
- Preheat the oven to 200°C/fan 220°C/gas 7.
- Oil and season the potatoes, then bake for 1 hour, until a knife slides in easily and the skins are crispy. Allow to cool for 10 minutes.
- Halve the potatoes lengthwise and place the cooked potato in a bowl. Leave a thin layer so that the shells retain their shape.
- Mash the potato with butter, mustard and spices, then stir in the spring onions, 175g cheese and kidney beans.
- Pour the mixture into the potato skins and sprinkle with the remaining cheese.
- Can be made a day ahead and refrigerated.
- Bake until golden brown, 30-40 minutes.
