Ingredients

  • 320g puff pastry sheet
  • Cup grated cheese (we mixed 60g cheddar with 25g parmesan)
  • flour, for dusting
  • 2 Table spoons of milk
  • Topping of choice (optional) – we used poppy seeds, dried oregano and sesame

Preparation steps

  1. Roll out the dough and sprinkle most of the cheese on one half of the sheet. Fold the dough in half to cover the cheese and seal.
  2. Dust your rolling pin and work surface with a little flour and place your dough sheet on top. Roll it out until doubled in size.
  3. Preheat the oven to 200°C/180°C fan/gas 6 and line two baking trays with baking paper.
  4. Cut the dough into shapes using cookie cutters and place on the prepared baking sheets. (Place the cookie cutters close together on the dough to reduce wasted dough. You can fold the scraps back on themselves and re-roll to cut out more shapes.)
  5. Brush the molds with milk and add a pinch of cheese and, if necessary, a pinch of topping of your choice.
  6. Bake in the oven for 10-12 minutes or until the dough is risen and golden brown, then transfer to a serving plate.
  7. Store in an airtight container for 3 days.
