Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas mark 6 and place a baking tray on the middle rack.
  2. Generously grease a 15cm soufflé dish, then sprinkle in the breadcrumbs and rotate the dish to ensure the butter is evenly coated. Discard excess breadcrumbs.
  3. In a skillet, melt the butter over medium heat; Stir in flour and mustard. Cook for 1 minute while stirring.
  4. Remove from the heat and gradually stir in the milk, mixing thoroughly before adding more. Place back on the stove and stir continuously until the mixture is very thick (approx. 10 minutes).
  5. Pour the thick white sauce into a bowl and let cool. Crack the eggs, place the whites in a clean bowl and stir the yolks into the sauce. Stir in cheddar and season well.
  6. Using a clean whisk, beat the egg whites until peaks form that just hold their shape. Then take a metal spoon and gently stir the beaten egg whites into the white sauce in a figure eight.
  7. Pour the mixture into the bowl. Run a cutlery knife around the edge to create a “top hat” effect. This ensures that the soufflé rises over the edge and doesn’t stick.
  8. Place the pan on the baking sheet and bake for 25-30 minutes, until the top is golden brown, risen and slightly wobbly.
  9. Serve immediately.
