- Using a clean whisk, beat the egg whites until peaks form that just hold their shape. Then take a metal spoon and gently stir the beaten egg whites into the white sauce in a figure eight.
- Pour the mixture into the bowl. Run a cutlery knife around the edge to create a “top hat” effect. This ensures that the soufflé rises over the edge and doesn’t stick.
- Place the pan on the baking sheet and bake for 25-30 minutes, until the top is golden brown, risen and slightly wobbly.
- Serve immediately.
