  • 250g flour, plus some flour for rolling
  • 125 g butter, cold and diced
  • ½ tsp salt
  • 2 onions, cut into rings
  • 1 tbsp oil
  • 2 eggs
  • 284 ml pot of double cream
  • 250g cheese – I used a third each of Stilton, Brie and Cheddar

Preparation steps

  1. Place the flour, butter and salt in the bowl of a food processor and pulse until the mixture resembles fine crumbs.
  2. Add 4 tablespoons of cold water and work into a dough.
  3. Turn out onto a lightly floured work surface, shape into a smooth disc, then wrap and chill for at least 10 minutes.
  4. Preheat the oven to 200°C/fan 180°C/gas 6.
  5. Roll out the dough on a floured surface until it is large enough to line a 9-inch loose-bottomed tart pan.
  6. Line the mold with the dough, leaving excess dough to remain.
  7. Line with baking paper and fill with baking beans.
  8. Bake on a baking sheet for 15 minutes.
  9. Remove the paper and beans and bake for another 10 minutes until light golden and cooked through.
  10. While the dough is cooking, fry the onions in the oil over medium heat for 10 minutes until golden brown.
  11. Mix eggs and cream, then season to taste.
  12. Crumble the hard cheese and cut or tear the cream cheese into small pieces.
  13. Sprinkle the cheese into the dough base, add the onions and then pour in the egg mixture.
  14. Turn the oven down to 160°C/fan 140°C/gas mark 3 and bake for 40 minutes, until set and lightly golden brown.
