  • 2 large leeks, washed, cleaned and halved
  • 4 slices of ham
  • 50g Parmesan
  • 100 ml crème fraîche

  2. Place the leeks in a single layer in a large pot and add enough hot water from the kettle to cover the mixture.
  3. Bring the water to a boil, then cover and simmer for 5 minutes, until the leeks are just tender.
  4. Place 2 slices of ham on a board, overlapping each other.
  5. Place 2 leek halves at each end of the ham slices.
  6. Wrap the ham and leek and repeat with the other leek pieces.
  7. Place the ham and leek packets in a small ovenproof dish.
  8. Mix three quarters of the cheese with the crème fraîche.
  9. Season the cheese and crème fraîche mixture.
  10. Pour the cheese and crème fraîche mixture over the parcels.
  11. Mix the remaining Parmesan with the breadcrumbs.
  12. Sprinkle the Parmesan-breadcrumb mixture over the parcels.
  13. Bake the packets for 15 minutes, until the cheese is golden brown and bubbling.
  14. Serve the cheese leeks with ham with a green salad and crusty bread.
