Ingredients

  • 1 tbsp olive oil
  • 300 g leek, halved and finely chopped
  • 8 slices smoked streaky bacon, sliced
  • 400g pasta shapes (we used penne)
  • 100 g herb and garlic soft cheese (we used Boursin)

Preparation steps

  1. Heat the oil in a large non-stick frying pan.
  2. Add the leeks and 2 tablespoons water and cook until very soft, about 10 minutes.
  3. Add the bacon, increase the heat and fry until cooked through.
  4. In the meantime, cook the pasta according to the package instructions.
  5. Drain the cooked pasta, reserving a cup of cooking water.
  6. Add cheese to leek and bacon mixture and add some of the reserved cooking water.
  7. Season the mixture and stir gently over low heat until the cheese is melted.
  8. Add the cooked pasta to the mixture, adding a little more cooking water if necessary to help the sauce coat the pasta better.
