  • 2 tbsp olive oil
  • 2 leeks, sliced
  • 200g mushrooms, sliced
  • 2 large carrots, peeled and coarsely grated
  • 1 tbsp spice, we used Schwartz Moroccan
  • 1 tbsp soy sauce
  • 300g canned beans, try kidney or pinto beans, drained and rinsed
  • 100 g Cheddar cheese, coarsely grated
  • 200 g (approx. 4 slices) grain bread torn into pieces
  • Burger buns, lettuce, tomato and other favorite foods to serve

Preparation steps

  1. Heat 1 tablespoon oil in a shallow pot over a medium heat.
  2. Add vegetables, spices and soy sauce, then cook, stirring occasionally, until tender, 10 minutes.
  3. Place the vegetables in a food processor with the beans, cheese and bread, season and then pulse into a thick paste.
  4. Using wet hands, shape the mixture into 8 burgers.
  5. These can be stored in the fridge for 2 days or stacked between baking sheets frozen for up to 2 months.
  6. To fry, heat oil in a frying pan and fry for 2-3 minutes on each side until crispy.
  7. Serve with toasted buns, salad, ketchup and mayo.
