Ingredients
- 2 tbsp olive oil
- 2 leeks, sliced
- 200g mushrooms, sliced
- 2 large carrots, peeled and coarsely grated
- 1 tbsp spice, we used Schwartz Moroccan
- 1 tbsp soy sauce
- 300g canned beans, try kidney or pinto beans, drained and rinsed
- 100 g Cheddar cheese, coarsely grated
- 200 g (approx. 4 slices) grain bread torn into pieces
- Burger buns, lettuce, tomato and other favorite foods to serve

Preparation steps
- Heat 1 tablespoon oil in a shallow pot over a medium heat.
- Add vegetables, spices and soy sauce, then cook, stirring occasionally, until tender, 10 minutes.
- Place the vegetables in a food processor with the beans, cheese and bread, season and then pulse into a thick paste.
- Using wet hands, shape the mixture into 8 burgers.
- These can be stored in the fridge for 2 days or stacked between baking sheets frozen for up to 2 months.
- To fry, heat oil in a frying pan and fry for 2-3 minutes on each side until crispy.
- Serve with toasted buns, salad, ketchup and mayo.
