Ingredients

  • 100g wholemeal flour
  • 50g self-raising flour
  • 25 g medium oat flakes
  • 100g butter
  • 100 g Cheddar cheese, finely grated
  • 1 large egg yolk

To form pinwheels, take half of the dough and roll it out between sheets of baking paper into a 22cm x 10cm rectangle. Spread some peanut butter or Marmite on the dough. Roll up tightly from the longest edge, using the paper to help. Cut into 1cm pieces, lay flat on the baking tray and cook as above. Repeat with the remaining dough.

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Put the flour and oat flakes in a bowl and rub in the butter.
  3. Stir in cheese.
  4. Add the egg yolk and mix with a fork.
  5. If the mixture starts to clump, use your hands to knead it into a smooth dough.
  6. Place the dough between two sheets of baking paper.
  7. Roll out about 1/2 cm thin.
  8. Cut out desired shapes and use a spatula to lift them onto a nonstick baking sheet.
  9. Re-roll any scraps and cut out more shapes.
  10. Bake in the oven for 12-14 minutes until golden brown.
  11. Leave it on the tray for a few minutes to firm up before transferring it to a cooling rack.
  12. Alternatively, take walnut-sized pieces of dough, roll them into balls and place them on the baking tray.
  13. Flatten slightly with a fork.
  14. Bake as before.
